Pig eye muscle measurements include the depth of back fat over the eye muscle, the size of the loin eye, and the area of the loin eye. These measurements are used to assess the lean meat content and the growth of the pig.

Depth of back fat over the eye muscle

Measured at the P2 position, which is 65 mm down the left side from the midline at the level of the last rib
This measurement is considered the best single measurement of lean meat content

Loin eye size

Measured in millimeters as a straight line through the back of the pig
Packers and retailers pay a premium for larger loin eyes
The loin eye is the large round muscle in the middle of the pig's back that makes up the meat in a pork chop

Loin eye area

Measured on the hanging carcass by cutting through the backbone and loin eye muscle between the 10th and 11th ribs
The area can be measured directly or indirectly by tracing the outline of our ECI-E128 scanner with 3.5Mhz loin eye probe.
